I bought a giant kohlrabi at the local farmer's market. I used palm-sized patches as a base for this dish. It is important to cut the kohlrabi carefully before grilling to speed up the cooking process (you can use a regular or grill pan).
Ingredients:
- turnip cabbage (kohlrabi) slice (up to 1 cm thick)
- 230 g canned red beans
- salt
- pepper
- 1 clove of garlic
- 1 tablespoon of tomato passata
- 1/2 teaspoon of smoked paprika
- 1 tablespoon of soy sauce
- 1 pickled cucumber
- rocket
- plum
- raspberries
- basil oil
Instructions:
- Cut the kohlrabi into slices.
- Cut the slices into a grid, season with salt and pepper.
- Sprinkle with olive oil.
- Grill the kohlrabi or fry it in a pan until it is lightly browned.
- Meanwhile, prepare the rest of the ingredients.
- Pour 1 tablespoon of olive oil into the pan.
- Add the drained beans and chopped garlic.
- Season with salt and pepper.
- Cook for about 5 minutes.
- Add tomato passata, smoked paprika, soy sauce and a diced pickled cucumber. Stir.
- Put a slice of kohlrabi on a plate and put 2 tablespoons of beans with a cucumber on top.
- Side dishes: arugula, plums and raspberries.
- Sprinkle it all with basil oil.
