A dinner made of a few ingredients, so full of flavour ... Oven-baked golden potatoes, fried oyster mushrooms and dill-garlic aioli sauce. The perfect set for any time of the day!
Ingredients:
- 700 g of potatoes
- 3 shallots
- spices: granulated garlic, chili powder, smoked paprika
- olive oil
- 400 g of oyster mushrooms
- olive oil
- salt and pepper
- 2 pinches of brown sugar
- 1 - 2 tablespoons of soy sauce
- a pinch of chili powder
- 1/2 teaspoon of smoked paprika
lemon-dill aioli sauce:
- 1 tablespoon of vegan mayo
- 1 tablespoon of vegan cream
- 1 tablespoon of lemon juice
- 1/2 clove of garlic
- 1 teaspoon fresh (frozen) dill
- salt and pepper
Instructions:
- Set the oven to 200 degrees C.
- Peel the potatoes and cut them into thin slices.
- Cut the shallots into quarters.
- Put the vegetables into a large bowl.
- Add spices and olive oil. Mix it with hands.
- Grease a casserole dish with oil and arrange the potato slices into a rosette. Stick the shallots between the potatoes.
- Cover with aluminum foil and bake in the oven for 20 minutes.
- In the meantime, take care of the oyster mushrooms.
- Cut oyster mushrooms along the gills into strips. Cut off the hard legs.
- Heat the olive oil in a frying pan and fry the mushrooms. Let them brown and just stir.
- Add spices and fry until golden brown.
- Look into the oven and take the aluminum foil cover off. Sprinkle the potatoes with oil.
- Bake for another 20-30 minutes, uncovered.
- Meanwhile, prepare a sauce from the above-mentioned ingredients.
- Serve the baked potatoes with oyster mushrooms and aioli lemon-dill sauce.
- Sprinkle the dill generously.
