Potato hash can be found in many countries. The main ingredients of this dish are potatoes, onions and meat. Life, however, quickly verified the content, because why not add a carrot or other vegetable left in the refrigerator? Hence, in each country and even region the taste of this dish will be different. The common feature is the way vegetables are chopped into small cubes ("hash" means chop). Thanks to this, everything is soft in the same stewing / frying time. I have for you a vegan hash with oyster mushrooms.
Ingredients:
- 500 g of oyster mushrooms
- 2 tablespoons of olive oil
- salt and pepper
- 1 teaspoon of brown sugar
- 2 tablespoons of soy sauce
- 1 teaspoon of smoked paprika
- 1/4 teaspoon of chili powder
- oil
- 250 g of onion
- 2 cloves of garlic
- 500 g of potatoes
- 100 g of carrots
- 100 g of red pepper
- 1/2 teaspoon of cumin
- 1/2 teaspoon of curry
- 1/2 teaspoon turmeric
- 1/2 teaspoon of sweet paprika
- salt and pepper
- vegan cream
- chives
Instructions:
- Fry the oyster mushrooms in olive oil. When they are already slightly brown, add all the spices.
- Stir and let the mushrooms brown. They will be crunchy.
- Put the onion and garlic into the second pan and fry it for a while.
- All vegetables are cut into 1 cm cubes and add to the onion. Stir.
- Add spices and stew, covered over low heat for about 10 minutes.
- Stir and stew another 10 minutes.
- After this time, the vegetables should be soft.
- Put vegetables and oyster mushrooms on the plate.
- Serve with a teaspoon of vegan cream and chives.
