A forgotten packet of tofu from the fridge, a couple of mushrooms and onions. The three main ingredients are seasoned, fried and mixed to give a rich, full-bodied flavour.
Ingredients:
- 250 g of natural tofu
- 1 tbsp of soy sauce
- 1 tbsp of olive oil
- a pinch of chili powder
- grated skin from 1/2 lime
- 1 cm of chili pepper
- 1 cm of grated ginger
- 1 tsp of maple syrup
- 150 g of mushrooms
- 4 spring onions
- 1 clove of garlic
- salt and pepper
- 2 tbsp of olive oil
- juice from 1/2 lime
- a handful of cashews
Instructions:
- Put the chopped tofu into the bowl.
- Add soy sauce, olive oil, chili powder, grated lime, chili pepper, grated ginger and maple syrup.
- Mix and set aside for 15-30 minutes.
- Meanwhile, cut mushrooms, spring onions and garlic.
- Pour the olive oil in a frying pan. Add the mushrooms and fry for a while.
- Add spring onions and garlic. Season with salt and pepper (cook until softened).
- Put the tofu in the second frying pan and fry until browned.
- Combine the ingredients from two pans.
- Add cashews and lime juice. Mix.
