QUINOA SALAD WITH GRAPES



Quinoa goes great with salads. You can cook it in advance, then preparing dinner will take no time.

Ingredients:

  • 100 g quinoa (before cooking)
  • 50 g of roasted hazelnuts
  • 100 g of cucumber
  • a handful of lettuce (or other green leaves, e.g. spinach, rocket ...)
  • 5 radishes
  • 150 g of dark grapes
  • dill
  • chives

mustard dressing:

  • 2 tbsp of olive oil
  • 1 tbsp of lemon juice
  • 1 tsp of mustard
  • 1 tsp maple syrup
  • salt and pepper
  • oregano

Instructions:

  1. Cook quinoa according to the instructions on the package. Cool down.
  2. Roast nuts in a pan. Cool down.
  3. Cut the cucumber into sticks and the radishes into slices.
  4. Cut the grapes in half.
  5. Prepare a dressing from the above ingredients (mix all the ingredients).
  6. Put quinoa and other ingredients into the bowl.
  7. Sprinkle with dill and chives.
  8. Pour the dressing over the salad.
