Quinoa goes great with salads. You can cook it in advance, then preparing dinner will take no time.
Ingredients:
- 100 g quinoa (before cooking)
- 50 g of roasted hazelnuts
- 100 g of cucumber
- a handful of lettuce (or other green leaves, e.g. spinach, rocket ...)
- 5 radishes
- 150 g of dark grapes
- dill
- chives
mustard dressing:
- 2 tbsp of olive oil
- 1 tbsp of lemon juice
- 1 tsp of mustard
- 1 tsp maple syrup
- salt and pepper
- oregano
Instructions:
- Cook quinoa according to the instructions on the package. Cool down.
- Roast nuts in a pan. Cool down.
- Cut the cucumber into sticks and the radishes into slices.
- Cut the grapes in half.
- Prepare a dressing from the above ingredients (mix all the ingredients).
- Put quinoa and other ingredients into the bowl.
- Sprinkle with dill and chives.
- Pour the dressing over the salad.
