We spent a sunny weekend at the edge of the Årdal fjord (Årdalsfjorden). Silence and lazily grazing sheep were the perfect environment to rest after a hard week.
I prepared savoury pancakes for breakfast. You can use your favourite vegetables and sauces for decoration. For me, it was just tomatoes, vegan feta and parsley.
Ingredients:
- 1 cup of flour
- 1/4 tsp of baking soda
- 1/4 tsp baking powder
- 1 tbsp of ground linseed + 3 tbsp of water
- 1 cup of plant-based milk
- 2 tbsp of nutritional yeast
- salt, pepper, a pinch of chili powder
- olive oil
- cherry tomatoes
- vegan feta
- parsley
Instructions:
- Pour linseed with 3 tablespoons of water and set aside.
- Cut vegetables.
- Put the dry ingredients into the bowl: flour, soda, powder, nutritional yeast, salt, pepper, chili powder and mix.
- Add flaxseed and milk. Mix with a whisk.
- Pour some olive into the pan and fry pancakes.
- Serve savoury pancakes with your favourite vegetables.
