This is a dinner recipe for eggplant lovers. One half of it is made by itself in the oven, so that meal is not time consuming at all.
Ingredients:
- 400 -500 g mini or regular large eggplant
- salt and pepper
- olive oil
- 1/2 red onion
- 1 clove of garlic
- 1 cm of chili pepper
- 1 cm of fresh ginger
- 125 g of natural tofu
- 1/2 teaspoon of sweet pepper
- 1/2 teaspoon of smoked paprika
- a pinch of chili pepper
- 1 tablespoon of soy sauce
- 1 teaspoon of maple syrup
- parsley / cilantro
- rice
Instructions:
- Set the oven to 200 degrees Celsius.
- Put chopped eggplant into a casserole dish.
- Season with salt and pepper.
- Pour olive oil and stir.
- Bake for 30 minutes.
- Meanwhile, cook the rice and prepare the tofu.
- Heat the olive oil in a frying pan and add chopped onion, garlic, chili pepper and ginger.
- Fry over medium heat until softened (about 5 minutes).
- Add the diced tofu (you can marinate it in spices beforehand, but I always forget about it ...).
- Season with peppers and cook for a while.
- Pour soy sauce, maple syrup and cook for a moment.
- Mix the baked eggplant with the tofu.
- Serve with rice or any other side dish.
- Sprinkle with parsley or coriander.
