CREAMY DILL FARFALLE WITH EDAMAME



Edamame beans are cooked for about 4 minutes, pasta on average 7-8 minutes, so your dinner can be ready in less than 15 minutes. You can replace the beans with peas or broad beans.

Ingredients:

  • pasta for two (in my case farfalle)
  • 150 g of edamame
  • 2 cloves of garlic
  • 1 cm of chili pepper
  • 3 tbsp of vegan cream (in my case soy 14%)
  • 1 tbsp of lemon juice
  • a bunch of dill
  • olive oil
  • salt and pepper
  • chili flakes

Instructions:

  1. Cook the pasta and edamame according to the recipe on the package.
  2. Heat the olive oil in a frying pan and add chopped garlic and chili pepper.
  3. Fry over medium heat, making sure the garlic does not burn.
  4. Add the cooked beans, season with salt and pepper.
  5. Stir and cook for about 3 minutes.
  6. Add cooked pasta, cream and dill. Mix up the moment.
  7. Sprinkle with lemon juice.
  8. On the plate, sprinkle the finished dish with chili flakes.
