There are many recipes and books about muffins and it will probably be some time before I get to know them all. But is it even possible? For now, I am sharing the recipe for muffins with forest fruit. They taste delicious and look refined, which is why I recommend them for all kinds of family events. The weekend is approaching, it is worth preparing something sweet.
Ingredients:
(10 muffins)
- 250 g of flour
- 1/2 tsp of baking soda
- 225 ml of soy milk
- 1/2 tbsp of apple cider vinegar
- 1 banana (90 g)
- 3 tbsp of oil
- 4 tbsp of maple syrup
- 70 g of forest fruit (frozen in my case)
- powdered sugar for sprinkling
Instructions:
- Set the oven to 220 degrees C.
- Prepare 10 muffin liners.
- Put flour and baking soda into the bowl. Mix it thoroughly with a whisk and set aside.
- Put a banana in the second bowl and mash it with a fork.
- Add liquid ingredients: soy milk, apple cider vinegar, oil, maple syrup and forest fruits. Mix with a spoon.
- Put the dry ingredients into the wet ones and mix them with a spoon.
- Put muffin dough into muffin liners and bake for 20-25 minutes.
- Sprinkle with powdered sugar when they cool down.
