A refreshing, light and healthy snack that can also be a salad with dinner. It looks very nice on the table, so it's worth "testing" it on your guests :)
I rolled my rolls outdoors (by the sea), because with such a beautiful sun the views are amazing .
Ingredients:
(four rolls)
- 1/2 greenhouse cucumber
- 1 small avocado
- 1 clove of garlic
- 1 small carrot
- 5 dried tomatoes
- salt, pepper
- lemon
- parsley
Instructions:
- Cut the avocado in half and discard the pit.
- Scoop out the pulp into the bowl.
- Dice the garlic and sun-dried tomatoes.
- Add them to the bowl.
- Smash gently avocado with a fork.
- Add salt and pepper.
- Sprinkle with lemon juice and combine. Put it aside.
- Carrots cut into thin strips. I use a special peeler, but a grater can be used.
- Cut the cucumber into thin, longitudinal slices (8 slices). I use a vegetable peeler.
- Put two cucumber slices next to each other so that one overlaps the other.
- Spread a tablespoon of guacamole, put a few sticks of carrots and gently roll up the roll.
- Sprinkle with parsley.
- Pierce the roll with a toothpick.
