SPAGHETTI WITH TOMATO, PEAS AND ROCKET


A few ingredients and a moment of time are enough to prepare one of the simplest dishes. Frozen peas are my favourite side dish in winter. I appreciate it for its sweetness and juicy green colour that whets the appetite.

Ingredients:

  • 2 portions of spaghetti
  • 4 tbsp olive oil
  • 4-5 cloves of garlic
  • 10 cherry tomatoes
  • a handful of frozen peas
  • 2 tbsp of nutritional yeast
  • a handful of rocket
  • salt, pepper, oregano

Instructions:

  1. Cook spaghetti. Check the pasta packaging for the cook times.
  2. Pour olive oil into a skillet and fry garlic (be careful, not to burn).
  3. Add tomatoes cut in half and frozen peas. Cook 5-10 minutes.
  4. Add seasoning. 
  5. Add cooked and drained pasta. Stir.
  6. Add rocket. Sprinkle with nutritional yeast on top.
