CORN TACO TUBS WITH GREEN LENTILS



A sunny day is the perfect day for outdoor cooking. There are wonderful views from the rocky hill with the Vistnes lighthouse. Lunch in such a place is a feast for body and soul. A gentle breeze and warm sun encourage you to stay here as long as possible ...

Ingredients:

  • 230 g cooked green lentils
  • 1 shallot
  • 1 clove of garlic
  • 1 small carrot
  • 1/2 tsp smoked paprika
  • seasoning mix (salt and pepper, dried onion and garlic, turmeric, oregano)
  • rocket
  • cucumber
  • pepper
  • olive oil
  • corn taco tubs from the store

sauce:

  • 2 tbsp oat cream
  • 1 tsp mustard
  • 1 tsp dill

Instructions:

  1. Pour the olive oil into a frying pan and lightly fry chopped onion and garlic. Cook until softened.
  2. Add smoked paprika and seasoning mix and stir.
  3. Add green lentils and carrot finely chopped into sticks. Cook 5 minutes.
  4. In the meantime slice the cucumber and pepper. Prepare the sauce (combine the ingredients).
  5. Put all ingredients previously prepared in mini tacos.
  6. Add sauce.
