In my family home, we used to add potatoes to every soup. I have only noticed that they are sometimes unnecessary. This recipe consists of few ingredients, so it is easy to prepare in all conditions. Ingredients:
- 1 tbsp coconut oil
- 1/2 red onion
- 1 clove of garlic
- 1cm fresh ginger
- 400g cauliflower
- 1 carrot
- 1 tsp vegetable seasoning (dried mix vegetables, salt, turmeric, granulated garlic - mince and store in a jar)
- 1/2 tsp of salt
- 1/2 tsp turmeric
- 1/4 cumin
- pepper
- 400 ml water
- 200 ml plant milk
- toppings: parsley/cilantro
Instructions:
- Heat coconut oil in the pot.
- Cut the onion, ginger, garlic and add to the pot.
- Cook for 5 minutes.
- Add seasoning and stir.
- Cut cauliflower and carrot.
- Add vegetables to the pot and stir.
- Cook for 10 minutes, stir occasionally.
- Pour water and milk and simmer for 20 minutes.
- Sprinkle of parsley or cilantro.
