My culinary discovery last year is Brussels sprouts. I prepare it in different versions and serve it with various toppings. Its versatility still amazes me. It can be served for dinner, added to a salad, packed into a lunch box or eaten as a snack.
Favourite recipes with Brussels sprouts:
Ingredients:
- 400g red Brussels sprouts
- 1 tbsp lemon juice
- 1 carrot
- 1 tbsp dried cranberries
- 1 tbsp coconut oil
- 1 tbsp soy sauce
- 1 tbsp maple syrup
- salt and pepper
- 1 onion
- 1 tbsp coconut oil
- 1/2 tsp of smoked paprika
- 1 tsp soy sauce
- 1 tsp maple syrup
- salt and pepper
- serve with couscous or other favourite sides
Instructions:
- Use two frying pan.
- On one of them, heat the oil and add the sliced onion.
- Add smoked paprika, soy sauce and maple syrup.
- Stir and cook until tender.
- Meanwhile in the second pan, heat the oil and add Brussels sprouts, cut in half.
- Sprinkle with lemon juice to maintain a beautiful purple colour.
- Add thinly sliced carrot.
- Add dried cranberries.
- Stir and cook 15 minutes.
- Add soy sauce and maple syrup.
- Cook vegetable until soft.
- Brussels sprouts with carrot and onion serve with couscous or other favourite sides.
