Outdoor cooking in the cold is a big challenge (can you see the frost on the plate?). But the sun makes up for all the inconvenience. Mosterøy is an island located about 15 km from Randabergu (where I live). Only a short drive through an underwater tunnel, cross a bridge and it parks at the bottom of the small Mastravarden hill. Walk up the hill and enjoy the views!
Ingredients:
- 2 cups corn flour "PAN"
- 2 i 1/2 cups water
- 1 tsp of salt
- oil
- favourite vegetables (I used: tomato, avocado, lettuce, parsley, vegan cheese)
Instructions:
- Combine dry ingredients with water.
- Set the bowl aside for 5 minutes.
- Use hands to form arepas (5 cm /2 inches in diameters and 1 cm/1/2 inch thick).
- Heat the oil in frying pan.
- Put arepas into the pan and cook, covered for 5 minutes.
- Turn over and cook until are golden brown.
- Transfer arepas on paper towel.
- Split arepas and stuff with favourite vegetables (or put them on top).
