Creamy zucchini soup is very quick and easy to prepare. It takes less than 30 minutes and you can enjoy a hot meal. On a maximum crazy day, I need an express dish made of a few ingredients. I always remember this recipe, because it saved my honor in the kitchen more than once :)
Ingredients:
(portion for four)
- 50 g of onion
- 50 g leek
- 1 clove of garlic
- 2 tbsp of olive oil
- 700 g of courgette
- 500 ml of water
- 1 tsp of vegetable seasoning (grind dried vegetables with salt, turmeric, granulated garlic and store in a jar)
- salt and pepper
- 3 tbsp of thick coconut milk
- 1 tbsp of nutritional yeast
- 4 tbsp of roastet pumpkin seeds
- chili flakes
Instructions:
- Pour some olive oil into a pot.
- Add diced onion, leek and garlic. Cook for a few minutes. Make sure nothing gets burned.
- Add the chopped courgette, stir and stew for a while.
- Add water (I pour the boiling water).
- Add spices.
- Cook for 15-20 minutes.
- Add coconut milk, nutritional yeast and blend into cream.
- Taste, add salt and pepper as needed.
- Serve the creamy courgette soup with roasted pumpkin seeds and chilli flakes.
